Beef Enchiladas (Crock Pot)

Just in case anyone is craving them, I make them different every time because I never write down the damn recipe! LOL My sister-in-law gave me a great recipe and now I just wing it on my own. But here is what I did today, I am making kind of a lot so here you go…

Brown 2 lbs of beef and put it in the crock pot

add 1 can of chicken broth (maybe less mine was kinda liquidy)

add 1 can of cream of chicken soup

add 1 can of red enchilada sauce

add 1 can of diced tomatoes with chiles in them

then I added half of a tiny can of green chiles which I wish I wouldn’t have cuz then kindof have a green peppery taste… anyways…

Let that cook on high for like 3 or 4 hours then take the soft tortilla shells and if you want you can line the bottom of the shell with refried beans. If not, just scoop out the mixture from the crock pot and put it in the shell. Roll the shell like an enchilada. Make as many to fill a glass pan (spray the pan first) then top with shredded cheese, a can of red enchilada sauce, and black olives. You can put tomato chunks or onion or whatever you like on top. Then bake that in the oven til its warm enough and the cheese is melty. DEEEEE-LISH! I also have an easy side of spanish rice from a packet, lol. Sounds good enough for me! Enjoy.

Family Night!

I am so excited to be staying on with my husband and daughter on this cold and rainy Friday! It’s going to be so cozy. I have beef enchiladas in the crock pot and it’s making my house smell so homey! I love to cook for my family and relax at night with them. My Halloween decor is up so we will be able to enjoy it while watching a movie tonight. I can’t wait for a movie and treats with my love!

Snack Time!

For some reason I am in LOVE with night time snack time. I can go all day eating totally healthy (newly after I had my daughter) but when it comes to night snacking, I am all over it. After dinner I usually want something sweet immediately. If we finish dinner later I will usually just have a small sweet treat, but if we have a smaller dinner and it ends up still being pretty early, I willgo for a salty snack followed by a sweet one! I can’t help myself ever since I became a Mommy. <3

Quaker Oats Oatmeal

The Quick Oats oatmeal by Quaker has an amazing recipe for oatmeal cookies. Of course it calls for raisins but I add chocolate chips instead! They are so delicious and I make them about once a month. I have made them many times in the normal cookie form and once in the pan version. I cannot decide which way I like them better. Both versions are very yummy and I really like to bake. Oatmeal is an excellent food, it makes for an extremely healthy breakfast and also serves as a very satisfying dessert. :)

Cinco de Mayo!

Feliz Cinco de Mayo everyone!!! I am not going out to drink Margaritas or anything this year but I am super excited to be making quesadillas for dinner tonight. I just got finished chopping the tomatoes and browning the meat. I have onions, peppers, salsa, shredded cheeses, and what I call “liquid cheese.” This is definitely not the most healthy meal around but it’s gonna be fun! It doesn’t hurt to eat bad once in a while. I hope my husband and my Dad can hold out until I get home at 7 PM tonight! (They better!!!!) I have prepared everything so that when I get home all we have to do is put the quesadillas together and throw them on the quesadilla maker. This isn’t related Mexican related or anything but I am also looking forward to when my husnad makes Rice Krispy Treats for us tonight! Since Easter, when we colored them pink, every time we make them we put food coloring in to jazz it up a bit. LOL we like doing it, it’s a fun, easy. and not too unhealthy snack. Afterall, the marshmallows are fat free! The recipe requires butter but very little. I don’t do that fake butter garbage… I am not into weird chemicals and things our bodies don’t know how to digest. I also don’t drink diet pop. If I want to eat healthy I just won’t have pop at all or cut back. Of course I still eat other things with unnatural ingredients like this “liquid cheese” I am about to have on my quesadilla… but I won’t seek out “artificial” sweetners because they are considered “sugar free” or fake butter because it’s considered to have less fat. Enough with my food rant, and now back to my dinner! We also have baked tortilla chips to go with our fresh salsa! I just remembered we have some left over Margarita mix in the fridge! Yippeee! As you can see I love doing thins for and spending time with my family. Any excuse to be with them is a good one. Why not have a little Cinco de Mayo celebration?! :) Enjoy.
